If you cannot find pre-gel starch you can also use guar gum or xantham gum. Add 1 cup of rice flour to the bowl along with half a teaspoon cream of tartar and half a teaspoon of bicarbonate soda.
Gluten free cooking is a lot of fun most of the time but for some people this could be rather frustrating. To make it more fun, it would be interesting to note that a lot of nations around the world survive without using flour. Mexican food for example is usually a good way to start your gluten-free diet.
